The Beginning

 My low carb journey started back in February of 2018. I had just started winter term at a local community college where I was earning an associate degree in Horticulture. I loved the program even though some of the activities really proved how out of shape I was and made me face the fact that I was fat. In fact, I was the heaviest I had ever been. It's hard to admit it, but I was around 280 at 5 foot 5 inches. 

Each Tuesday a class I was in would go on plant walks either on campus or on fieldtrips to local parks. I tried my best to keep up, but if there were up hill walks...I'd definitely be the one in the back pretending to take a picture of something just to hide the fact at how out of breath I was. I didn't want others to think less of me because I couldn't keep up.

My most embarrassing moment was when I was almost unable to buckle the seatbelt in front of the class when it was my turn to test drive the tractor in safety class. That was the last straw for me. No longer was I going to accept the fact that I was fat. It put a fire into me that lead to a healthier me.

I had recently watched a show on Netflix called "The Magic Pill". The stories of other people's battle with ailments that seemed to be resolved or helped by lowering carb intake or a ketogenic diet inspired me. I wasn't sure how to start, but I did and it was the best thing for me.

First, I cut out of my diet the obvious things like breads, sugar, potatoes, sweets, pasta, legumes, and high carb alcohol. For about 3 weeks I experienced what is known as keto flu. At the time I thought I was having an allergic reaction to something and had a cold or something. My skin was itchy and I had hives. This was not fun, and after some research I was relieved to find that this was a common side effect that goes away and did with me too. 

It was around this time that I found out that a class mate of mine was on the Ketogenic diet and explained to me what that was. I was excited to learn more about it as I was not fully on that diet and was just cutting my carb intake. Basically I was on a Keto diet without the added fat.

She introduced me to a wonderful source of knowledge gifted by Dr. Berg. I watched as many videos as I could. His approach to the ketogenic diet is all about being healthy and healing your body.

With the removal of high carb foods, I then stopped with the snacking. Once I got that under control, I tested out intermitted fasting. It was hard at first, but with time it's a no brainer.

Each week I would loose a few pounds and I was just amazed and over joyed to see a diet actually work. By June, I was at 204 and was able to wear my first non plus sized outfit. I felt on top of the world.

Fast forward to 2022 I am maintaining a healthy weight of 150. I would still like to get down to 145 and keep it there, so that is my next goal. I see what was once called a diet turn into a lifestyle change. I no longer crave the carbs or starches and have found lots of great recipes, hacks, and products along the way. 

This blog is to inspire others who want to make their own change. I will be sharing delicious recipes, low carb hacks, and tried products. We are all in this journey together.
